Ahi Lumpia


Pieces of yellow fin tuna (or ahi), green onion and cilantro are sealed in egg roll (or lumpia) wrappers, deep fried, and served with dressing.



Ingredients:

  • 20 lumpia (or egg roll) wrappers
  • 20 pieces of ahi (cut to 1x3")
  • 1 Tablespoon minced garlic
  • 1/2 cup mayonnaise
  • Salt and white pepper to taste
  • Cilantro, cut to 3"
  • Oil for deep frying
  • Flour paste (2 Tablespoons flour and 1/4 cup water mixed together to form a paste)

Method

Season ahi with salt and pepper to taste, add garlic and mayonnaise and mix gently. Place ahi on lumpia wrapper, garnish with green onions and cilantro. Fold wrapper like an envelope, seal edges with the flour paste. Deep fry until golden brown. Drain lumpia on paper towels.

Notes: Ahi (yellow fin tuna) may be served on a bed of shredded cabbage. Optional to serve with an oriental dressing that may be purchased at a grocery store, or any other favorite dressing you may have.
