Asian Salmon Noodles

Fresh salmon in a sweet sauce made with hoisin, soy sauce and rice wine vinegar-serve with fettuicine or linguine.Ingredients
- 1 Tbsp sesame oil
- 1 lb fresh or frozen salmon fillets, skin removed
- 2 Tbsp fresh grated ginger
- 2 Tbsp minced garlic
- 1 bunch green onions, sliced into 1/2 inch slices
- 1/2 cup soy sauce
- 1/4 cup rice wine vinegar
- 2 Tbsp hoisin sauce
- 1 tsp red pepper flakes (more or less depending on how spicy you want it)
- 1 lb cooked fettucine or linguine

Method
Heat oil over medium-high heat in large wok or skillet for 1 minute. Add salmon, ginger and garlic; cook 2 minutes per side. Add 1/2 of the green onions, reduce heat to medium and continue cooking 4 to 5 minutes longer. Meanwhile, combine all remaining ingredients except pasta. Pour sauce into salmon mixture, and continue to cook until salmon flakes easily. Break salmon up into bite size pieces. Stir in cooked pasta. Remove from heat and serve immediately.
Notes: I have varied this recipe so many ways over the years, it is quite versatile. Add whatever other ingredients you like including sliced water chestnuts, mushrooms, snow peas, etc.
