Asian Tuna Rice Salad

This fresh and healthy salad is prepared with rice, green and purple cabbage, carrot, a homemade Asian dressing and, of course, tuna.
 

Ingredients

  • 2 cups cooked and cooled brown rice
  • 1 cup shredded carrot
  • 1 cup chopped green cabbage
  • 1 cup chopped purple cabbage
  • 1/4 cup chopped fresh cilantro
  • 2 green onions finely chopped
  • 1 can albacore tuna in water
  • Salt and pepper
  • Dressing:
  • 2 cloves garlic pressed or very finely minced
  • 2 tbsp sesame seeds
  • 2 tbsp seasoned rice vinegar
  • 1 tbsp soy sauce
  • 1/4 cup creamy peanut butter
  • 1 tsp sesame oil
  • 1/4 cup peanut or canola oil
  • 1 tbsp brown sugar

Method

Make dressing and refrigerate: Combine all ingredients in a blender and pulse for 30 seconds. Set aside in refrigerator. Combine rice with carrots, cabbage, cilantro and green onion. Stir in dressing and refrigerate for 20 minutes. Take out of refrigerator and stir in tuna. Serve immediately. Salt and pepper to taste.

 

Notes:

 

Number of Servings: 4-5 as a main dish.
