Asian Gingered Salmon

This flavorful marinade of soy sauce, grated gingerroot and garlic may be used for salmon, chicken or pork.

Ingredients:

  • 4 individually frozen salmon fillets, thawed (about 5 to 6 oz. each)
  • 1/2 cup (reduced-sodium) soy sauce
  • 1 tbsp grated fresh ginger
  • 2-3 cloves garlic, minced
  • 1 1/2 Tbsp sugar (or Splenda)

Method

Combine soy sauce, ginger, garlic and sugar, stirring to dissolve sugar. Pour over salmon in a gallon-size zipper-lock plastic bag. Marinate 2-4 hours in fridge, turning occasionally. Remove salmon from marinade. Place salmon in baking dish in a preheated 350 degree oven. Bake about 15 to 20 minutes or until fish flakes easily with fork.
