
Pieces of salmon are spread with a seasoned butter mixture, wrapped in bacon, cooked and served on top of skillet-cooked asparagus.
For Salmon: Place butter in a small bowl and add garlic, parsley, lemon juice, and desired amount of sage, garlic salt, and pepper. Mix well.
Cut each piece of salmon horizontally and spread insides with the flavored butter. Fold back together and hold closed with 2 strips of bacon and wooden picks. Lightly brush each fillet with oil and fry about 3 minutes per side, or until bacon is crisp and salmon flakes.
Asparagus: Heat a large skillet over high heat. Add asparagus and drizzle with some of the olive oil. Scatter with sea salt and cook just until done. Transfer to serving plates and place salmon on top. Heat remaining oil and add garlic and chili. Remove from heat; add some basil. Strain the fragrant oil and serve over salmon.
