Baked Crab Cakes

Crabmeat, parmesan, chives, egg, bread crumbs, baking powder, and a variety of seasonings are combined and baked to serve as appetizers or a main course.
Ingredients
- 1 lb fresh crabmeat
- Light vegetable oil cooking spray
- 1 tbsp grated Parmesan cheese
- 1 tbsp chopped chives
- 1 large egg, beaten
- 1 tbsp Old Bay seasoning (or to taste)
- 1 tbsp dried Italian seasoning
- 2 tbsp jalapeno pepper, chopped
- 4 garlic cloves, minced
- 4 green onions, finely chopped
- 1 tbsp baking powder
- 2 tbsp chopped cilantro
- 1 tbsp Worcestershire sauce
- 1 cup dried bread crumbs, divided

Method
Preheat oven to 400 degrees. Rinse crabmeat under cold running water and drain, making sure to remove any filament or shell, then coarsely chop. Spray vegetable oil over baking sheet to coat well. In a large bowl, combine all remaining ingredients, except 1/2 cup of the bread crumbs, then stir in crabmeat. Using about 1/4 cup for each crabcake, form mixture into 8 cakes. Roll each in the reserved bread crumbs and place on prepared baking sheet. Spray crabcakes lightly with cooking spray. Place baking sheet on lower shelf of oven and bake about 5 minutes per side, until brown.
