Baked Fish Filet Essaouira Style

Mild white fish fillets gain flavor from a savory mix of herbs and lemon juice.
 

Ingredients

  • 2 white fish filets
  • 1 tomato, sliced
  • 1 onion, sliced
  • 1 lemon, sliced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1 tablespoon lemon juice
  • 2-3 tablespoons olive oil
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon pepper or to taste
  • 1 teaspoon salt or to taste
  • 2 garlic cloves, minced
  • 1 tablespoon rosemary

Method

Place onion slices in a baking dish and add one fish filet on top. Add ginger powder, cumin, garlic, parsley, cilantro, lemon juice and half of salt to filet. Cover first fish filet with a second fish filet. Place slices of tomato and lemon alternately on top of fish. Add remaining salt, pepper and rosemary to dish. Drizzle with olive oil. Cover dish with foil and bake 45-60 minutes at 375 degrees.
