Baked Fish Kid's Delight

A healthy, low fat kid favorite--frozen cod fillets baked with zucchini, salsa and mozzarella cheese.
Ingredients
- 1 lb frozen cod fillets, thawed, do not separate fillets
- 2 medium zucchini, sliced
- 1 1/4 cups thick and chunky salsa, divided
- 1/2 cup finely shredded mozzarella cheese

Method
Preheat oven to 400 degrees. Cut fish into 4 equal pieces. Mix zucchini and 1 cup of salsa in 9 inch square baking dish and top with fish. Spoon 1 tbsp remaining salsa over each piece of fish. Bake 15 minutes then sprinkle evenly with cheese. Bake an additional 8 to 12 minutes or until fish flakes easily with fork.
Notes: Substitute any mild flavored white fish, such as haddock, sole, whitefish or halibut, for cod. Serve up this tasty, low calorie, baked fish that will please the kids and can help you and your family eat right.
