Baked Fish with Peppers

Fish fillets take on amazing flavor when baked with peppers and onions.
Ingredients
- 6 6 oz fish fillets
- 1/2 cup butter
- 1 medium red pepper, sliced thin
- 1 large green pepper, sliced thin
- 1 large sweet onion, sliced thin
- 1 large yellow pepper, sliced thin
- 2 bananas pepper, sliced thin
- Salt and pepper to taste
- 1/4 cup fresh lemon juice
- 2 tablespoon fresh lime juice
- 1/2 cup fresh chopped parsley

Method
Preheat oven to 375 degrees. Place peppers and onion in a 2 inch deep pan, lined with heavy foil. Butter bottom and sides of fish, and add lemon and lime juice. Cover and bake for 25 minutes. Uncover and bake for 25 minutes or until fish fillets flakes when tested with a fork.
Notes: You can used a 2 to 3 pound whole fish instead of fillets.
