Baked Salmon with Black Bean Salsa

This healthy dish is easy and delicious. The black bean salsa is fresh with a hint of citrus that rounds the dish out nicely.
 

Ingredients

  • 3 lbs salmon filet
  • Salt and pepper
  • Olive oil
  • 1 can of organic black beans
  • 1 can of organic garbanzo beans
  • 1 tbsp fresh parsley, chopped
  • 2 tbsp red onion, chopped
  • 1 tbsp fresh cilantro, chopped
  • 1/2 green pepper, chopped
  • 1 orange
  • 1 tsp lemon juice
  • 1/4 cup Agave nectar or honey
  • Apple cider vinegar

Method

Season salmon with salt and pepper. Bake at 350 degrees F. until meat flakes, approx 20 minutes. Prepare salsa by mixing beans in bowl. Cut parsley, cilantro, onion and green bell pepper. Mix cut ingredients with the beans and add salt and pepper to taste. Drizzle with olive oil and a splash of apple cider vinegar, approximately 1 tsp. Squeeze juice of one orange into beans, add lemon juice and Agave nectar honey. Mix all ingredients well and add salt and pepper to taste. Spoon black bean salsa on top of prepared salmon. Serve with warm corn bread and favorite green vegetable.
