Baked Salmon with Lemon-Pepper Garlic Butter

A garlicky butter is poured over this salmon fillet. Baking in a foil pouch keeps it moist.
Ingredients
- 1 stick butter or margarine
- juice of two lemons
- 2tsp. ground black pepper
- 2 whole garlic cloves, peeled and chopped
- 2lb. salmon fillet
- 1 whole lemon, sliced
- 1 red sweet pepper cut into large slices

Method
Preheat oven to 375 degrees. In small bowl, slowly soften butter in microwave. Add lemon juice, pepper, and garlic; finish melting in microwave. Place salmon, skin side down, into aluminum foil pouch. Pour butter mixture over salmon, top with lemon slices and red peppers. Seal pouch and place in 8x8in. baking dish. Bake 35-45 minutes, until done. Serve with white rice and vegetables.
