Baked Crab Alaska


Crabmeat is stirred into a rich white sauce with sherry, egg yolks, sauteed mushrooms and pimiento, and spooned over toasted English muffin halves. That's topped with beaten egg whites, sprinkled with parmesan, and then baked.



Ingredients:

  • 1/4 c. butter or margarine  
  • 1/3 c. flour  
  • 1/4 c. mayonnaise  
  • 1 3/4 c milk  
  • 1/4 c. dry sherry  
  • 6 egg yolks  
  • 8 oz. fresh mushrooms, sliced and sauteed in butter  
  • 3/4 lb. cooked crabmeat, broken into chunks
  • 1 small jar chopped pimiento
  • 1/2 tsp. Worcestershire sauce  
  • 4 English muffins, halved and toasted
  • 6 egg whites  
  • 1/2 tsp. cream of tartar
  • Paprika  
  • Parmesan cheese  

Method

In double boiler, stir butter or margarine, flour and mayonnaise till smooth. Add milk and sherry; cook and stir until thickened and bubbly. Add hot mixture slowly to well-beaten egg yolks and cook 2 minutes more. Stir in mushrooms and crab; add pimento and Worcestershire sauce. On baking sheet, spoon mixture over toasted English muffin halves. Beat egg whites with cream of tartar until peaks form; spoon over crab mixture. Sprinkle with paprika and Parmesan cheese. Bake at 350 degrees about 15 minutes until golden brown.
