Baked Potato Salad


Make this hot potato casserole for a potluck or picnic. This recipe also has crabmeat, celery, and onions.



Ingredients:

  • 6 to 8 potatoes, peeled, diced and boiled with salt  
  • 1 cup mayonnaise
  • 4 stalks celery, diced  
  • 1 medium onion, diced  
  • Imitation crabmeat (any amount), chopped fine  
  • Salt and pepper to taste  
  • Panko or bread crumbs  
  • 1/2 cup melted butter

Method

Mix all ingredients. Put in casserole dish and top with panko or bread crumbs lightly; pour melted butter (1/2 cup) over and top again lightly with fine panko or bread crumbs. Bake 15 to 20 minutes in 400 F oven and then broil for 5 minutes or until brown on top.
