Bay Scallops and Shells


Here scallops are combined with a blended cottage cheese mixture and used to fill cooked pasta shells.



Ingredients:

  • 6 ounces large pasta shells
  • 1 tablespoon bottled Italian salad dressing  
  • 1/4 cup low-fat cottage cheese
  • 1 tablespoon lemon juice  
  • 1 tablespoon chopped fresh dill  
  • 1 cup finely chopped celery  
  • 1/4 cup chopped green onion  
  • 1 pint bay scallops, steamed  

Method

Cook pasta shells according to package directions; rinse and drain. Mix pasta with Italian dressing. In a blender, combine cottage cheese with lemon juice and dill until smooth. Pour cheese mixture into bowl; stir in scallops, celery and onion. Spoon salad mixture into shells.

Notes: Preparation: 30 minutes Cooking Time: 15 minutes Makes 5 Servings. Note: Preparation: Bay scallops are very firm with a delicate, sweet flavor. They may be steamed, baked, broiled, sautied or stir-fried. Description Selection: In this country, scallops are almost always sold shucked. Bay scallops are about 1/2" in diameter and averages 70 to 90 in a pound. Plan to purchase 1/4 to 1/3 pound of scallops per serving. Look for scallops with an ivory or pinkish color and firm meat.
