
Shrimp is cooked in a sauce that contains a roux made of browned flour and fat. The sauce also contains stewed tomatoes and vegetables, and it's served over rice.
In a large frying pan make a roux by browning flour in bacon drippings (or olive oil) until about the color of a penny. Stir tomatoes, tomato sauce, minced onion, green pepper, parsley, garlic, water, salt and pepper into flour/oil mixture. Bring sauce to a boil and reduce heat to simmer. Cook 20 minutes. Add shrimp to mixture and cook 10 minutes longer (If you use fresh shrimp cook only 5 minutes).
Notes:
At times I have substituted olive oil for the bacon fat, and because I like things a little spicy when making for myself, I add some red pepper flakes.
Serve over rice.
