Big Easy Cajun Shrimp


Shrimp is cooked in a sauce that contains a roux made of browned flour and fat. The sauce also contains stewed tomatoes and vegetables, and it's served over rice.



Ingredients:

  • 3 Tbsp all-purpose flour
  • 3 Tbsp bacon fat (or olive oil)
  • 2 cups chopped stewed tomatoes
  • 1/8 cup (2 Tbsp) tomato sauce
  • 1/4 cup minced onion
  • 1/4 cup chopped green bell pepper
  • 1 1/2 Tbsp chopped parsley
  • 1 clove crushed garlic
  • 1 1/2 cups hot water
  • 1 to 2 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 7 ounces frozen, peeled and deveined shrimp

Method

In a large frying pan make a roux by browning flour in bacon drippings (or olive oil) until about the color of a penny. Stir tomatoes, tomato sauce, minced onion, green pepper, parsley, garlic, water, salt and pepper into flour/oil mixture. Bring sauce to a boil and reduce heat to simmer. Cook 20 minutes. Add shrimp to mixture and cook 10 minutes longer (If you use fresh shrimp cook only 5 minutes).

Notes: At times I have substituted olive oil for the bacon fat, and because I like things a little spicy when making for myself, I add some red pepper flakes. Serve over rice.
