Blue Cheese Shrimp Linguine

This elegant sounding dish is less than 30 minutes away from the table.
Ingredients
- 3 tbsp extra virgin olive oil
- 3 tbsp butter
- 2 cloves garlic, minced
- 1 to 1 1/2 pounds medium shrimp, peeled and deveined
- 4 oz quality blue cheese
- 1 lb linguine, cooked per package directions

Method
Heat olive oil and butter. Add garlic and simmer until oil infused. Add shrimp and saute for 4 minutes. Place in 8 X 8 casserole dish and crumble blue cheese over top evenly. Bake in preheated 350 degree oven for 12-14 minutes. Serve over linguine which has been tossed with 2-3 tbsp olive oil.
