Bojangles Shrimp


Large shrimp are covered with barbecue sauce and wrapped with bacon, then grilled and served on a bed of yellow rice, onions and peppers.



Ingredients:

  • 12 16-20 count shrimp
  • 6 strips bacon
  • 1/2 cup BBQ sauce
  • 1 large bag yellow rice
  • 1/4 cup chopped onion
  • 1/4 cup red pepper, chopped
  • 4 oz mayonnaise
  • Old Bay seasoning

Method

Prepare rice according to package instructions; add onion and pepper, then let stand covered. Peel shrimp leaving tails on, dip in BBQ sauce, and wrap with 1/2 slice bacon. Place shrimp on broiler pan; broil turning as needed to cook bacon. Serve on rice bed, 3 to a plate. Sprinkle Old Bay over top. Serve with a small cup of BBQ sauce on side.

Notes: This is best done with lean bacon. Can use any thick BBQ sauce.
