Bourbon Pineapple Shrimp Kabobs

The bourbon glaze is what makes these kabobs unbeatable. Substitute beef, chicken or pork for an equally great kabob.
 

Ingredients

  • Bourbon Pineapple Glaze:
  • 1/4 cup bourbon
  • 1/4 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup oil
  • 1/4 cup prepared mustard
  • 1/4 cup Worcestershire sauce
  • 2 slices pineapple
  • Kabobs:
  • 1 cup Bourbon Pineapple Glaze
  • 24 jumbo shrimp, peeled and deveined
  • 2 bell peppers, one red one green
  • 24 fresh mushrooms
  • 24 pieces fresh cubed pineapple
 
Method

Glaze: Combine all ingredients in food processor. Kabobs: In a large resealable plastic bag, combine 1/2 cup glaze and shrimp. Cut each pepper into 12 wedges. In another large resealable plastic bag, combine vegetables, pineapple and remaining glaze. Seal bags and turn to coat. Refrigerate for 2 hours, turning occasionally. Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread shrimp and vegetables/pineapple. Grill kabobs, covered, over medium heat for 3 minutes on each side or until shrimp turn pink.
