Butter Broiled Salmon Fillets

Salmon fillets are breaded with cornmeal and bread crumbs, then broiled, and served with a sweet currant and caper sauce.
 

Ingredients

  • 8 tbsp butter
  • 4 salmon fillets of equal size, about 1 1/2 pounds total
  • 1/4 cup yellow cornmeal
  • 1/4 cup panko bread crumbs
  • 2 tbsp lemon juice
  • 1 tbsp white balsamic vinegar
  • 1 tbsp honey
  • 1 clove garlic, crushed
  • 1 tbsp capers
  • 1 tbsp dried currants
  • 1 tbsp finely chopped roasted red bell peppers
  • 1 tbsp minced green onion
  • 1 tbsp snipped Italian parsley
  • 1/4 tsp lemon pepper
  • 1/4 tsp lemon zest
  • Toasted pine nuts for garnish
 
Method

Place butter in a medium saucepan and melt over low heat. Remove pan from heat and brush fillets all over with butter. Coat salmon in a mixture of cornmeal and crumbs. Broil 6 inches from heat source 8-10 minutes, turning once or until fish tests done. Meanwhile, simmer remaining butter in saucepan over medium heat until a nutty brown color, swirling occasionally, about 5 minutes. Remove from heat and whisk in lemon juice, vinegar, honey and garlic. Stir in remaining ingredients and warm through. Arrange fillets on a platter and spoon sauce over top. Garnish with nuts.
