No need to roll or nigiri. Sushi rice with avocado, top with smoked salmon and some scallions. Easy, fast and delicious home made sushi.

  • Servings: 2-3
  • Prep Time: 5 minutes
  • Cook Time: 60 minutes
  • Total Time: 65 minutes

Ingredients:

1 cup Uncooked Sushi Rice or Short Grain Rice
¼ cup Rice Vinegar
2 Tbsp Sugar
½ tsp Salt
1 Avocado
½ cup Chopped Smoked Salmon
1 Tbsp Soy Sauce
1 Tbsp Minced Scallions, only green part

Directions:

1. Rinse rice several times in running water until water gets clear. Drain in a colander. Cook in a saucepan with a lid or rice cooker according to package directions.

2. While rice is cooking, in a small bowl, combine rice vinegar, sugar, and salt. Mix well.

3. When the rice is done, transfer to a medium bowl and add rice vinegar mixture and mix gently. Don’t stir too much. Let cool for 15-20 minutes.

4. Halve avocado, remove seed, scoop avocado pulp and dice each halved avocado. Then add to the sushi rice bowl. Mix gently to coat well.

5. Put the avocado sushi rice into each serving bowl, chopped smoked salmon and minced scallions. Pour the soy sauce and serve.

Helpful Tips:

If you like spicy taste, add wasabi to the soy sauce. As more options, sesame seed, nori are also good for topping.
