Caprese Style Grilled Cod Rolls

A twist on the classic lobster roll featuring grilled cod, tomatoes, peppers and bocconcini accented with pesto sauce.

1 lb Cod Fillets, cut into 1" cubes
8 Cherry Tomatoes
8 Pieces Green Bell Pepper
8 Bocconcini, marinated small fresh mozzarella balls), drained, reserving marinade
4 Whole Wheat Split Top Hoagie Rolls
4 Tbsp Basil Pesto Sauce
Garnish, snipped basil and lemon zest


Place the cod cubes, tomatoes and pepper pieces in a bowl; add 1/4 cup reserved marinade. Toss to coat and let stand 30 minutes. Drain and skewer the cod and peppers on a skewer and the tomatoes and bocconcini on another skewer. Cook the skewers over medium high direct heat 5-7 minutes, turning once or till the cheese is soft. Remove the tomato skewers from the grill and keep warm. Continue to grill the fish and peppers 3-5 minutes more or till the fish tests done. The last minute of cooking toast the rolls cut side down on the grill edge. Spread the inside of the rolls with the pesto, then fill with the grilled cod, peppers, tomatoes and mozzarella balls. Drizzle a little more reserved marinade over each roll, garnish and serve.
