Carribean Grilled Mahi with Mango-Avacado Salsa


Mahi Mahi (a type of dolphin) is marinated in orange juice and seasoned with cumin before grilling. It is served with a salsa containing avocadoes, mangoes, red onion and cilantro plus lime juice.



Ingredients:

  • 4, 8 oz Mahi Mahi Fillets
  • 8 oz Orange Juice
  • 4 t ground Cumin
  • 1 t Salt
  • 1 t Black Pepper
  • 4 Avocado
  • 4 Mango
  • 8 oz Red Onion
  • 8 T Chopped Cilantro
  • 8 oz Lime Juice
  • 1 t Salt

Method

Marinate Mahi Fillets in the orange juice for 1/2 an hour. Remove Mahi from the marinade, season with the cumin, salt and pepper, and place on pre-heated grill. Dice the avocado, mango and red onion and mix in a medium bowl along with the chopped cilantro, lime juice and salt. Allow ingredients to "marry" at least 5 minutes. Once the Mahi filets reach the safe temperature and desired doneness, remove them from the grill place them over a bed of rice or a fresh salad and top with the Avocado Mango Salsa.
