Chef Kyle's Peruvian Style Tilapia Ceviche

With ceviche the fish is "cooked" by the acid in the citrus juice. This recipe adds some spice with jalapeno, tomato and cilantro.
 

Ingredients

  • 1 large jalapeno, small dice
  • 1/2 red onion, thinly juilenned
  • 1/2 bunch cilantro, chopped fine
  • 8 oz filet of tilapia, sliced into bite sized thin strips.
  • Juice of two limes, juiced fresh
  • 2 tablespoon kosher salt
  • 1 teaspoon sugar

Method

Combine all ingredients in a medium "glass" mixing bowl and allow to marinate refrigerated for 2 hours, stirring every 30 minutes to ensure an even coating of fish and marinade.

 

Notes: This is a wonderful refreshing recipe for ceviche. It was taught to me by a Peruvian chef years ago and has always been a crowd pleaser.
