Chef Kyle's Peruvian Style Tilapia Ceviche

With ceviche the fish is "cooked" by the acid in the citrus juice. This recipe adds some spice with jalapeno, tomato and cilantro.
Ingredients
- 1 large jalapeno, small dice
- 1/2 red onion, thinly juilenned
- 1/2 bunch cilantro, chopped fine
- 8 oz filet of tilapia, sliced into bite sized thin strips.
- Juice of two limes, juiced fresh
- 2 tablespoon kosher salt
- 1 teaspoon sugar

Method
Combine all ingredients in a medium "glass" mixing bowl and allow to marinate refrigerated for 2 hours, stirring every 30 minutes to ensure an even coating of fish and marinade.
Notes: This is a wonderful refreshing recipe for ceviche. It was taught to me by a Peruvian chef years ago and has always been a crowd pleaser.
