Chicken, Seafood & Vegetable Casserole


Cooked chicken, shrimp, and crabmeat are mixed with broccoli, bell peppers, rice, Old Bay and Soul Seasonings to create this casserole.



Ingredients:

  • 3 skinless, boneless whole chicken breasts, seasoned with salt & pepper and broiled
  • 1 cup of peeled and deveined small salad shrimp, seasoned with Old Bay Seasoning & a touch of white cooking wine, and lightly broiled
  • 1 cup of Cooked claw Crabmeat
  • 1 cup of steamed, chopped broccoli, with a touch of butter
  • 2 cups of cooked white rice
  • 2 cups of sharp shredded cheddar cheese
  • 1 cup of shredded taco-blend cheese
  • 1 cup of diced green, yellow, & red bell peppers
  • One-half stick of melted butter (1/4 cup)
  • 5 pinches of Soul Seasoning
  • 1 pinch of garlic powder
  • 2 pinches of Old Bay Seasoning

Method

Reserve a small amount of shredded cheddar cheese for over the top. Combine all remaining ingredients in a large bowl and mix together well. Then take a glass baking dish and spray the dish with olive oil cooking spray. Spread the ingredient mixture into the dish and then take reserved cheddar and sprinkle over the top of the dish. Bake in a 400 degree oven about 30-45 minutes, or until heated through.
