
Large shrimp are seasoned in a lime juice and cilantro marinade, grilled, and drizzled with a cilantro, melted butter and lime mixture.
Squeeze the juice of ten of the limes (without seeds) into a bowl. Finely chop cilantro; set aside 1 cup. Place rest in bowl with lime juice. Place shrimp in large zip-locking bag. Pour cilantro-lime mix in bag. Refrigerate for 2 hours, turning bag every 30 minutes. Place shrimp on preheated grill for 2 minutes on each side. In small saucepan place 1 cup of cilantro and the butter. Cook until butter melts. Place romaine lettuce on platter and place shrimp neatly on top. Pour the heated cilantro-butter sauce over shrimp. Squeeze the remaining 2 limes over shrimp and serve.
Notes:
Great for a party or event also. You may vary the ingredients to suit your taste.
