Coconut Flounder

Coating the fresh flounder in mustard and then rolling it in coconut and flour makes for a fresh, flavorful, and crunchy fish sandwich.

4 slices Potato Bread
1 Lemon
1 Large Egg
¼ cup Yellow Mustard
¼ cup All Purpose Flour
¼ cup Coconut Flacks
1 qt Olive Oil
2 lbs Boneless Flounder


Pour olive oil into a 5 quart pot and let stand on medium heat. In a large bowl, beat one egg and set aside. Cut lemon in half and squeeze one half over individual flounders. Coat both sides of flounder with yellow mustard. Dip flounder into beaten egg. Lightly coat flounder with flour and coconut flakes. Place flounder in hot cooking oil. Flounder is done when it floats, 10-15 minutes. Drain oil from fried flounder by placing on paper towels. Place hot fried flounder between two slices of potato bread and serve.
