|1½ cups||Coffee Flavored Liqueur|
|1 cup||Brown Sugar|
Combine coffee liqueur and brown sugar in small saucepan. Bring to a boil for 3 minutes. Continue to simmer for about 15-20 minutes. The mixture should start to caramelize a little. Meanwhile rinse off your salmon, pat dry and lay aside. Preheat oven to 350 degrees. Spray cookie sheet with cooking spray. Place salmon on pan. Take a tablespoon and pour liquid mixture over one side of salmon. Cook for 3 minutes. Repeat this step for the other side of the salmon. Place on plates and lightly drizzle mixture over salmon.
This recipe takes about 35 minutes from start to finish. ItÂ’s a very tasty and light. It also goes very well with a vegetables sautÃ©ed in olive oil and garlic.
