Coriander and Crab Soup


A creamy soup with just a bit of spice, loaded with vegetables, fresh cod and crab.



Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1 large onion, peeled and finely chopped
  • 2 cups chopped celery, stalks and leaves
  • 4 garlic cloves, minced
  • Large handful finely chopped fresh cilantro
  • 2 large sprigs fresh rosemary, leaves only, chopped fine
  • 12 baby redskin potatoes, washed, cleaned, unpeeled, diced (1/4")
  • 1/2 cup tomato paste
  • 1 lb salt cod, soaked overnight, boiled and pureed in a food processor
  • 1 lb fresh lump crab meat
  • To taste: salt and freshly ground pepper or cayenne pepper
  • 2 tablespoons toasted coriander seeds, coarsely chopped in spice mill

Method

Heat olive oil in a large soup pot over medium heat. Saute onions, celery and garlic until soft and garlic has released its characteristic aroma. Add cilantro, rosemary and diced potatoes. Cover soup pot and bring to a boil. Simmer for about 10-15 minutes or until potatoes are tender. Add tomato paste, pureed cod and crab. Bring to a quick boil. Season to taste with salt, pepper or cayenne and toasted, cracked coriander seeds.

Notes: Add fish and crab just before service. Suggestion: Serve with garlic Italian baguettes.
