Crab and Corn Bisque

This creamy bisque is the perfect start to an elegant meal or the prefect pairing with a salad and some good bread.
 

Ingredients

  • 1/2 cup finely chopped yellow onion
  • 1/4 cup finely chopped green bell pepper
  • 1/2 tbsp finely chopped garlic
  • 1 can cream style corn (14-16oz)
  • 1/2 lb crab meat
  • 1/2 stick butter
  • 1 1/2 cups half and half
  • 1 1/2 cups light whipping cream
  • 2 bay leaves
  • 1 tbsp Creole seasoning
  • 5 dashes of Tabasco

Method

Melt butter in pot. Saute onion, pepper, and garlic until they appear glossy in appearance. Slowly whisk in half and half and cream. Stir in cream corn. Add Creole seasoning, bay leaves and Tabasco. Bring to a boil. Add crab meat, reduce heat to low and simmer for 5 minutes. Remove bay leaves, serve and enjoy.
