Ingredients:
| 12 oz | Crab Meat, drained |
| 20-30 | Snow Peas |
| 2 | Green Onions, only white and pale green parts, chopped |
| 1 stalk | Celery, chopped |
| Zest of 1 Lemon | |
| 4 Tbsp | Cream Cheese, softened |
| ½ cup | Mayonnaise |
| ⅛ tsp | Salt |
| ¼ tsp | White Pepper |
| Red Pepper To Garnish |
Directions:
Cook snow peas in boiling water for 30 seconds. Let cool immediately in a bowl of ice water for ten minutes, then drain.
Dice about 1/4 of red pepper, seeds removed, in little square shapes for garnish. Mix together crab meat, celery, green onions, lemon zest, cream cheese, mayonnaise, salt and pepper. Carefully open snow pea pods and stuff each snow pod with the crab meat mixture and garnish with red pepper.
