Crab Stuffed Deviled Eggs

Crab, red bell pepper, honey and chives add a great flair to this other wise traditional side dish.
 

Ingredients

  • 16 large eggs
  • 2 tablespoons salt
  • 1/4 pound flaked crab meat
  • 1/2 cup mayonnaise
  • 1/4 cup chopped chives
  • 1/2 teaspoon dry mustard
  • 1/4 cup finely chopped red bell pepper
  • 1/2 teaspoon ground cayenne pepper
  • 3/4 teaspoon salt
  • 1 tablespoon honey
  • 1 tablespoon Hungarian paprika
 
Method

Place eggs in a single layer in a large pot. Sprinkle with salt and cover with water 2 inches above eggs. Bring to a low boil and boil 4 minutes. Cover and let stand 12 minutes. Soak in ice water for 10 minutes and peel. Cut in half and scoop out yolks and a little bit of white to make a deeper egg half. Place scooped egg halves on a platter. Mash scooped out yolks and whites with a fork. Place mashed egg in a medium mixing bowl and stir in crab, mayonnaise, chives, mustard, peppers, salt and honey until mixed. Stuff eggs with crab mixture and sprinkle with paprika.
