Delectable Chorizo and Shrimp

A mixture of chorizo sausage and shrimp, with tomatoes, green onion, basil and garlic is served over rice.
Ingredients
- 3 cup water
- 1 1/2 cups fragrant rice
- 5 tbsp (1/3 cup) extra virgin olive oil
- 2 large garlic cloves, minced
- 2 chorizo sausages, sliced thin
- 1 lb large shrimp, peeled and deveined
- 4 thin green onions, sliced in 1-inch pieces
- 5 large fresh basil leaves, chopped
- 1 can petite diced tomatoes with juice
- Garlic hot sauce to taste, light is better
- Salt and pepper to taste

Method
In medium pan, bring water to a boil and add rice. Cover pan and reduce heat. Cook 20 minutes or the time that the directions call for. While rice is cooking, in a large pan, heat olive oil and garlic cloves on medium heat just until oil is hot and garlic starts to sizzle. Add chorizo pieces and saute until lightly browned, stirring frequently, 5 to 7 minutes. Stir in shrimp; continue to cook until shrimp are nearly done. Combine remaining ingredients with sausage and shrimp. Stir well and continue to cook just until shrimp is cooked. Cover and remove from heat; let stand 4-5 minutes. Serve over hot rice. Add more garlic Tabasco as needed.
Notes: I couldn't believe how quick and easy this recipe was. My family loved it.
