Devilish Crab Puffs

These flaky puffs filled with crabmeat make tasty treats to serve as appetizers for almost any group.
Ingredients
- 1/2 c. milk
- 1/2 c water
- 1/4 c butter
- 1/4 tsp salt
- pinch nutmeg
- pinch white pepper
- 1 c. flour
- 4 eggs at room temp
- 1 c. shredded swiss divided

Method
Preheat oven to 400. Heat milk, water, butter, salt, nutmeg, and pepper in 3 qt saucepan until it boils. Remove pan from heat and add flour, mixing until smooth. Cook over low heat, stirring constantly until mixture leaves side of pan clean and forms a ball. Add eggs 1 at a time, beating until smooth and shiny after each. Continue beating until mixture loses its gloss. Stir in 3/4 c. cheese. Drop rounded teaspoons onto greased baking sheets. Sprinkle with remaining cheese. Bake 30-35 minutes until golden brown. Cool on wire racks. Before filling, cut off tops and scoop out centers. To make filling, place crabmeat in medium bowl. Add rest and stir gently. Heat oven to 375 and fill puffs with crab filling. Place on ungreased baking sheet and bake 10 minutes.
