Dori's Florida Citrus Fish

Florida's best citrus flavors and garnishes this fish dish. Limes, lemons, grapefruit and oranges, tasty and healthy.
 

Ingredients

  • 2 limes
  • 2 lemons
  • 2 grapefruit
  • 3 oranges
  • 6 tbsp butter
  • Lemon pepper to taste
  • Dill, fresh or dry, to taste
  • 4-6 frozen or fresh white fish, tilapia or whiting
  • White or wild rice mix

Method

Wash but do not peel fruit. Slice all citrus thin, about 1/2 inch. Layer citrus in pan as follows; grapefruit, orange, lemon, lime, grapefruit and so on. It's ok if fruit overlaps some, it will shrink while cooking. Next place fish filets on top of layered fruit. Melt butter and pour over fish. Sprinkle lemon pepper and dill on fish. Top with remaining fruit. Cover with foil tightly. Use a clear glass 8 x 11 baking dish, so you can watch the fruit and the level in which it has cooked. When fruit on the bottom starts to brown slightly fish is done. Cooking time may very due to fish size. Remove cooked fruit and discard. Plate with hot cooked rice, place fish filet over rice mound. Drain juice from cooking pain through a strainer to remove seeds. Pour strained juice over fish. Garnish with fresh citrus (optional), fresh dill sprigs and wild rice mix, following cooking directions. Set aside until ready to plate.
