Salmon fillets, seasoned with dill & lemon-pepper, are topped with dried tomatoes, capers, olives and feta cheese before grilling or baking.
Place salmon fillets in a foil-lined baking dish or pan. Squeeze lemon juice over top. Add seasoning, dillweed, dried tomatoes, capers, black olives, feta cheese, and pinenuts (if desired) on top. Bake at 400 for 20-25 minutes, depending on how you prefer your fish.
Or, as opposed to baking, place in a heavy foil "boat", and grill on indirect heat about 18-23 minutes or until salmon is done.

Double the recipe for 4 servings.
