Firecracker Shrimp with Avocado Salsa

These jumbo shrimp are stuffed with jalapeno and onion, wrapped in bacon and then fried to perfection. The avocado salsa is a great addition.
Ingredients
- 12 extra large shrimp
- 12 pieces bacon
- 4 jalapenos
- 1 large onion
- 1/2 cup chives
- 1/4 cup lemon juice
- 3 avocados

Peel and devein shrimp. Make sure there is a deep cut where vein was removed. Set shrimp aside. Slice onion and 3 jalapenos lengthwise, about 1/4 inch wide. Take out all seeds and set aside. Dice other jalapenos very small. Cut chives into small pieces. Dice 1/2 of an avocado. In a frying pan, combine chives, jalapenos and diced avocado with lemon juice. Heat over medium heat until jalapenos and avocado are soft and mixed well. Mixture will thicken quite a bit. While that is cooking, take a slice of jalapeno and onion and place in cut of shrimp. Roll bacon around it and stick a toothpick in to hold together. Repeat for all shrimp. Fry on medium heat 10-15 minutes, turning every 3-4 minutes. Top with a slice of avocado and a side of avocado salsa.
