Fish Curry

Pieces of catfish are cooked in a mixture of onion and tomato, flavored with garlic, ginger, cumin, turmeric, coriander, green chili powder and cinnamon, and served with rice.
Ingredients
- 1 large onion
- 2 cloves of garlic, minced
- 1/2-inch piece fresh ginger, minced
- 1 large tomato
- 1 tbsp vegetable oil
- 1/2 tsp cumin seeds
- 2 bay leaves
- 1/2 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp green chili powder
- Salt, to taste
- 2 catfish fillets, cut up
- 1/2 tsp ground cinnamon
- Cooked rice

Chop onions finely. Mince garlic and ginger very finely. Chop tomato into small pieces. Place all ingredients on a large plate or in small bowls so it is easy to use them efficiently. Pour the vegetable oil into a pan; keep it on medium heat. Add the cumin seeds and watch them slowly brown up. Add the bay leaf and then the onions. Let the onions become deep golden brown. Now add the garlic and ginger, and stir constantly. Make sure garlic does not burn. Now add turmeric, coriander, and chili powder; stir constantly until the mixture starts to sweat off oil. Add tomatoes; mix well. Finally add cut up fish fillets and cinnamon; stir all together. Add salt; cover the pan and let it cook for 5 to 10 minutes or until the fish is cooked. Serve hot with plain cooked rice.
