Fish fillets are baked on top of a rice mixture that also includes mushroom soup, frozen vegetables, onion, basil and chicken broth.
In a saucepan, add butter, garlic, onion, and rice. Add basil, 'All-seasoning' (about 2 Tsp), and dried red-pepper flakes (I like my dishes a bit spicy, so I estimate about 1 tsp for me.) Sautee until rice is opaque. Then in a large mixing bowl, mix together rice mixture, mushroom soup, veggies, and chicken broth. It's going to be soupy - but don't worry, the rice will absorb all the moisture in the oven. Pour all into a 2-quart baking dish. Add fish fillets to the top of the mixture. Cover and bake at 375 degrees for 1 to 1 1/2 hours, until done. Remove from oven and let cool slightly before serving. You may add salt and pepper to taste.
Notes:
Depending on the size of bag of frozen veggies you get, you may need to use just half the bag--go on how much will fit in your baking dish. This is something I came up with when I was really short on cash one month, and trying to come up with something good to eat with what I had left in my refrigerator and cupboards.
