Flounder with Crab and Sausage Stuffng

Crab meat and sausage add a great richness and zest to the cornbread stuffing in this dish.
 

Ingredients

  • 1 medium to large flounder, prepared for stuffing or baking
  • 4 oz lump crab meat
  • 4 oz pork or beef sausage, link or ring type, cooked, remove casing and diced
  • 1/2 cup diced onion
  • 1/4 cup diced celery
  • 1 tbsp minced garlic
  • 4 tbsp butter
  • 4 tbsp extra virgin olive oil
  • 1 tbsp spicy Cajun seasoning
  • 1 tbsp parsley
  • 1 tbsp chives
  • Salt and fresh ground pepper to taste
  • 2 cups crumbled cornbread
  • 1 cup crumbled garlic croutons
  • 1 cup chicken broth

Method

In sauce pan, combine butter and oil, then heat until butter has melted, over medium to low heat. Add onion, celery, garlic, crab meat and sausage, then saute until onion and celery are tender. Add to cornbread and croutons then mix in parsley and chives. Add chicken broth to moisten mixture. Stuff flounder with mixture. Coat flounder with oil, then salt and pepper the outside. Bake in a 375 degree oven for 25 minutes or until flounder flakes with a fork.
