|½ cup||Plain Flour|
|2 Tbsp||Old Bay Seasoning|
|Salt, to taste|
|2||Medium-size Grouper Fillet|
|¼ cup||Canola Oil|
|¼ – ⅓ cup sliced||Almonds|
Mix flour with Old Bay Seasoning, paprika and salt in a flat bowl. Clean and dry grouper fillets. In large frying pan place oil and butter; heat to frying stage. Dredge grouper fillets in flour mixture; cook in oil and butter until lightly browned and fish is flaky when pierced with fork.
Meanwhile, in a small DRY skillet place almonds over low heat, stirring occasionally. Do not burn. These will toast without using oil. Drain grouper on paper toweling; place on serving plate. Squeeze juice of 1/2 lemon over each filet, then place almonds on top of each filet. Serve immediately.
This is extremely easy and very delicious! I serve this with fresh asparagus or broccoli and a slow-baked sweet potato--baked at 250 degrees for several hours. The sugar in the potato will caramelize and you will not need butter or any seasoning.For company just have extra grouper fillets on hand.
