
Salmon fillets are seasoned with lime juice & garlic, grilled, flaked, then combined with a rice, mayonnaise, & horseradish mixture and baked.
Rub the salmon fillets with olive oil, garlic & lime juice; set aside while grill warms up. Cook rice in chicken broth according to the directions on box. Chop onions and red peppers and place in large mixing bowl; set aside.
Bar-B-Q the salmon fillets on medium-high heat on grill for 3 to 4 minutes per side. Brush both sides of citrus slices with some olive oil and grill, turning over once, until grill marks appear, 2 to 3 minutes total. Crumble salmon into large bowl, making sure you take any little bones out; add rice and remaining ingredients; mix well. Pour into a glass 13x9x2-inch greased baking dish and bake in a 350 degree oven about 20 minutes. Garnish with grilled citrus slices and parsley sprigs.
