Garlic & Lime Bar-B-Q Salmon Bake


Salmon fillets are seasoned with lime juice & garlic, grilled, flaked, then combined with a rice, mayonnaise, & horseradish mixture and baked.



Ingredients:

  • 4 salmon fillets
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced  
  • Juice of 1 lime
  • 2 cups of white rice
  • Chicken broth (for cooking rice)
  • 1/2 cup chopped red pepper
  • 1/2 cup minced onion
  • 1 Tablespoon horseradish
  • 6 drops hot sauce
  • 1/2 cup mayonnaise
  • 2 eggs
  • 1/2 teaspoon EACH of salt & lemon pepper seasoning
  • Garnish:
  • 1 fresh lemon, sliced thin
  • 1 fresh lime, sliced thin
  • 3 sprigs of fresh parsley

Method

Rub the salmon fillets with olive oil, garlic & lime juice; set aside while grill warms up. Cook rice in chicken broth according to the directions on box. Chop onions and red peppers and place in large mixing bowl; set aside. Bar-B-Q the salmon fillets on medium-high heat on grill for 3 to 4 minutes per side. Brush both sides of citrus slices with some olive oil and grill, turning over once, until grill marks appear, 2 to 3 minutes total. Crumble salmon into large bowl, making sure you take any little bones out; add rice and remaining ingredients; mix well. Pour into a glass 13x9x2-inch greased baking dish and bake in a 350 degree oven about 20 minutes. Garnish with grilled citrus slices and parsley sprigs.

Notes: My family and co-workers love this dish. It's easy and very good.
