
Avocado shells hold a mixture of avocado pulp with tomato, watercress, green chilies, shrimp or crabmeat. They may be topped with sour cream or a drizzle of Fresh Herb Dressing, made with mayonnaise, sour cream, garlic, vinegar, and four herbs.
Scoop out avocado pulp, leaving the peel as a shell; set aside. In medium bowl, cut avocado pulp into bite-size pieces; toss with lemon juice. Add tomatoes, watercress, green chilies, shrimp or crabmeat, and salt; mix well. Spoon avocado mixture into avocado shells. Place each filled shell on a plate. Top with sour cream or herb dressing. Garnish each plate with olives.
Herb dressing: Combine all ingredients in blender. Blend till smooth. Yield: 1 1/4 cups
