The seasoned salmon steaks are served with a sauce that contains both fresh and dried apricots, plus apricot preserves, almonds & rice vinegar.
Brush the salmon steaks with the olive oil. Combine the curry, salt, sugar and pepper; sprinkle onto both sides of the salmon steaks. Grill or broil about 6 minutes per side or till salmon tests done, turning carefully. While the salmon is cooking place the rest of the ingredients in a small saucepan; cook till hot and well blended. Place the salmon steaks on a platter and spoon the glaze over top; garnish and serve.
Notes:
Serve with couscous and a spinach salad.
