Gourmet Eggrolls

These gourmet eggrolls are prepared with chicken, shrimp, Italian sausage, and vegetables. What a great treat to make in your own home.

  • Servings: 30 eggrolls

Ingredients:

1 cup Nacho Cheese
1 bag Lo Mein Mixed Vegetables, thawed
1× 8 oz can Chicken, drained
30 Egg Roll Wrappers
1 lb Ground Italian Sausage
1 lb Shrimp
½ cup Fresh Oregano Leaves
Fresh Pepper & Seasoned Salt, to taste
Vegetable Oil

Directions:

Fry sausage separately in a skillet. Combine mixed vegetables, chicken, nacho cheese, oregano, salt and pepper. Stir until chicken breaks up into shreds. Place mixture in microwave for 2-4 minutes, or until hot to touch. Add sausage to mixture and stir. Lay eggroll wrappers on a flat surface and place 1/8 compacted cup of mix onto the middle of wrapper. Spread out in an even line in the middle of wrap and close it like a present. Be sure to moisten the final edge before you fold it over. Preheat a skillet of vegetable oil, or a deep fryer set to 350 degrees. Place a few eggrolls in skillet for 45-60 seconds. If using a skillet, make sure to turn them after about 25-30 seconds, so they won't burn. Place completed rolls on a pan, covered with paper towels, to drain excess grease.
