Grecian Grape and Salmon Saute

This salmon dish has the added flavors of grape juice and seedless grapes, honey, lemon juice and almonds. The feta cheese is the perfect finish.
Ingredients
- 1 tbsp olive oil
- 1 pound salmon fillets
- 1/4 cup white grape juice
- 1 cup halved seedless green grapes
- 1/2 tsp ground cinnamon
- 1 clove garlic, minced
- 2 tbsp sliced almonds
- 1 green onion, minced
- 1 tbsp honey
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1/2 tsp ground white pepper
- 1/2 tsp salt
- 1 tbsp snipped parsley
- Garnish: crumbled feta cheese

Method
Heat oil in a large nonstick skillet over medium high heat. Add salmon and cook 2 minutes on each side, then lower heat, cover and cook 4-6 minutes, or until salmon tests done. Remove salmon to a serving platter and keep warm. To skillet, add grape juice and next 6 ingredients. Cook 2 minutes then add remaining ingredients and heat through. Spoon sauce over and around salmon and garnish with cheese.
