Frozen spinach is seasoned with garlic and layered in a baking dish with large shrimp, dried tomatoes, Greek olives and feta cheese.
Preheat oven to 350 degrees. Heat olive oil in a 10-inch skillet over medium heat. Add garlic and saute about 1 2 minute. Add drained spinach and cook until hot.
Remove spinach from skillet and place in a 2-quart baking dish; set aside. Add shrimp to skillet and saute until shrimp turns pink and is cooked through, about 3 minutes. Remove from heat and set aside.
Sprinkle tomatoes, olives and about half of the feta cheese on top of the spinach in the baking dish. Add shrimp on top and the remaining feta. Bake, uncovered, at 350 degrees until hot, about 20 minutes. Remove from oven and sprinkle the fresh basil leaves on top, if desired. Serve immediately.

This recipe is also excellent served over rice.
