Greek-Style Shrimp Salad

Small shrimp are combined with mushrooms, carrot, red onion and Greek seasoning, then tossed with Swiss cheese and balsamic vinaigrette.
 

Ingredients

  • 1 1/2 lbs. peeled and deveined small cooked shrimp
  • 1 lb. fresh white mushrooms, thinly sliced
  • 1/4 cup shredded carrot
  • 1/4 cup finely chopped red onion
  • 1 teaspoon Greek seasoning
  • 12 oz. shredded baby Swiss cheese
  • 1 cup purchased balsamic vinaigrette dressing

Method

Gently toss first five ingredients together in a large clear glass bowl. Cover and chill one hour. Just before serving, toss in cheese. Pour dressing over salad. Toss to coat. Serve immediately.

 

Notes: This beautiful salad makes a perfect low-carb meal. It is easy to make ahead, then add cheese and dressing to individual servings if desired.
