Fish fillets are soaked for several hours in half-and-half or light cream, then dredged in a Cajun-seasoned cornmeal-Parmesan mixture before before frying.

2 lbs Fish Fillets
2 cups Half-and-half or Light Cream
2 cups Yellow Corn Meal
½ cup Flour
2 Tbsp The Cajun Seasoning, see below
2 Tbsp Grated Parmesan Cheese
½ tsp Garlic Salt
Peanut Oil
Cajun Seasoning:
5 Tbsp (1/3 Cup) Paprika
1 Tbsp Salt
¼ cup Garlic Powder
2 Tbsp Dried Oregano
2 Tbsp Dried Thyme
2 Tbsp Onion Powder
2 Tbsp Black Pepper
2 Tbsp Ground Red Pepper


Soak fish in half-and-half for several hours or overnight. Mix all coating ingredients thoroughly, using a food processor. Remove fish from half-and-half and shake off excess. Dredge each fish fillet in coating mixture, and very carefully place in hot oil in frying pan or deep fryer. Fry each piece about 3 minutes on each side. Drain on paper towels.

Helpful Tips:

I mix my Cajun seasoning and keep it on hand in an airtight container in the refrigerator.
