Grilled Salmon With Avocado Cilantro Salsa

Ingredients:
| Salmon: | |
| 1 Tbsp | Extra Virgin Olive Oil |
| 2× 6 oz | Salmon Fillets |
| ¼ tsp | Kosher Salt |
| ¼ tsp | Pepper |
| Salsa: | |
| 1 | Mexican Hass Avocado |
| 1 | Large Red Tomato |
| 1 Tbsp | Fresh Snipped Cilantro |
| ¼ tsp | Kosher Salt |
| ¼ tsp | Pepper |
| 1 tsp | Extra Virgin Olive Oil |
| 2 | Springs Flat Italian Parsley, for garnish |
Directions:
Rub the grill grate with the olive oil. Heat grill to medium. Season the salmon with the salt and pepper. Grill salmon steaks for 7 minutes on each side. Meanwhile, prepare the salsa by peeling, pitting and dicing the avocado. Place avocado in a medium bowl. Core and dice tomato. Add to medium bowl. Add cilantro, salt, pepper and olive oil. Toss salsa ingredients. Remove salmon to two medium plates. Place 1/2 of salsa on each plate, beside and partially on top of salmon. Garnish with flat parsley springs.
