Grilled Salmon with Balsamic and Shallot Sauce

This meal for one has grilled salmon, sprinkled with seasoning and topped with a wine sauce of shallots and balsamic vinegar.
 

Ingredients

  • 2-3 shallots, chopped
  • Two tablespoons butter
  • 1 teaspoon of Extra Virgin OliveOil
  • Pinch of salt and pepper
  • Dry white wine: 1/4 cup
  • Balsamic vinegar (to taste)
  • 1 teaspoon of sugar
  • Salmon fillet
  • Old Bay Seasoning
 
Method

Cook the shallots in the butter and oil, with a pinch of salt and pepper, on medium-high heat. Carefully add white wine. Stir occasionally for 2-3 minutes; add vinegar; stir, then add the sugar. Reduce heat to low. Spread some additional Oil on the salmon; season with Old Bay Seasoning. Place it on a grill for 5-8 minutes or until done. Remove Salmon from the grill. Plate, then add the Sauce over top.
